Joseph Ciolli’s entrepreneurial journey began with a deep-seated passion for the culinary arts and a vision to transform Grimaldi’s Pizzeria into a national icon. After college, he gained valuable experience in the restaurant hospitality business before returning to New York City to join forces with Grimaldi’s Pizzeria in Brooklyn. Inspired by the pizzeria’s devoted customer base, perfected recipes and charming traditions, Ciolli saw an opportunity to expand the brand into something much bigger.
Through strategic leadership and unwavering dedication, he successfully expanded the brand to over 45 restaurants nationwide, including six locations in metro Phoenix and one in Flagstaff.

In the restaurant and hospitality industry, Grimaldi’s Pizzeria has a mission to provide customers with an exceptional dining experience centered around high-quality handcrafted pizza made using traditional techniques and premium ingredients.

Under his guidance, the company has grown from a single location in Old Town Scottsdale to over 45 restaurants across more than 10 states and internationally in Abu Dhabi. Of all his accomplishments, Ciolli is most proud of launching Grimaldi’s franchising program, an initiative that enabled the company to expand its footprint into new states and international markets.
Outside of the restaurant industry, Ciolli’s influence is evidenced by his involvement in charitable initiatives and community engagement efforts with contributions to organizations like Childhelp, Phoenix Theatre Company, and Healing Hearts Animal Rescue to showcase his commitment to making a positive impact beyond success.
Known for endurance, Ciolli strives to pass on his determination to others. “I don’t quit – I keep pushing for results,” he said. “My advice is to never stop, to never give up, and fight to the end. Most people quit when things get hard, so you need to have the tenacity to stick with it and forge ahead.”
As a leader, he said he relies on endurance, patience and level-headedness. “Endurance allows a leader to persevere confidently despite setbacks – you operate differently when you’re in it for the long haul,” said Ciolli. “Patience helps leaders navigate challenges by prioritizing long-term strategy over quick fixes and level-headedness ensures a leader can maintain their composure under pressure and make sound decisions.”
